VISITING VIETNAM
The French traces in Vietnam are unmistakeable and can be found anywhere. No wonder, after a colonial period of more than 100 years. This influence is most visible in various inner cities and it is tastable in the Vietnamese cuisine. The French introduced. amongst other things, the technique of sautéing, the use of bones to make stock, the use of white potatoes. And on many street corners fresh French baguette are available every morning! Today, Vietnamese cuisine is a unique blend of tastes and texture, not to be found elsewhere in Asia. In one way our dinner tonight will not be Vietnamese at all: we don't serve all our dishes at the same time (as is common in Vietnam and many surrounding countries). We present a separate starter, main dish and dessert.
