Probably there is no country in the world where yoghurt is such an essential element in the national cuisine as Bulgaria. Understandingly, because Bulgarian Yoghurt is a household word worldwide. The Bulgarian cuisine has more to offer, however. It is heavily influenced by surrounding countries like Greece and Turkey - but the influence goes both ways.
Eggplant Byurek

The main dish consists of grilled rolls of minced lamb with pepper and cumin (as usual only imported lamb), accompanied by two typical Bulgarian sauces: Snezhanka (yoghurt and dill) and Luttenitza (tomato, garlic, onion). It is served with a tasty salad from the Bulgarian countryside, including olives and white beans.
