We spent our recent vacation on two of the islands of Hawaii. The most surprising restaurant where we had dinner was Roy's - he specializes in excellent Hawaiian fusion recipes. We did not copy or steal them, but we let us inspire by him. For this first weekend after our trip we created a menu à la Roy's: Hawaiian elements combined with ingredients or techniques from elsewhere. It leads to quite an interesting blend of flavors. We did not pick Roy's most intriguing recipe, lobster with escargots (snails) - sorry if that disappoints you. But of course fish and pineapple will be included in this fusion menu!
Waikiki Pumpkin Soup
Tonight we start with a creamy pumpkin soup with raw vegetables and crushed walnuts.
Snapper a la Roy's
The main course consists of fillets of fried red snapper covered with warm grapes and black olives combined with ravioli pasta.
Fusion Sorbet
We conclude tonight's menu with a pineapple sorbet with a warm lemon grass syrup
