Salmón Grutense (Las Grutas Salmon) with Tortilla Campesina and Chimichurri Salsa
The main dish is a salmon steak, prepared in the style of Las Grutas, a fisherman's village and beach resort in Pagagonia. The salmon is first cooked in milk, then marinated, then grilled. We serve it with Tortilla Campesina (an Argentine potato 'pudding' omelet) and Chimichurri Salsa, the local ketchup.
