SOOOO SPANISH!

In history the country and its cuisine were influenced by the Greeks and Romans but even more by Africa: for 800 years Spain was occupied by the Moors. In particular ingredients like almonds, honey and egg yolks were introduced from North Africa, especially in dessert making.
Later, imported ingredients from the New World, which included the tomato, potato, vanilla, a wide variety of beans, courgettes and peppers also took a firm place in Spanish cuisine.
Spanish cooking is still essentially family cooking in the sense that it's relatively simple to prepare and always uses fresh products.
Tuna Tapas
Because the main dish is quite filling, we have chosen a light starter. Tapas are very common Spanish and Latin appetizer snacks. The name comes from Spanish tapa, which means 'lid, cover' because they were served on a small saucer that covered a glass with a drink. Our tapas are made from tuna, marinated in olive oil, garlic and vinegar and served with crackers.
Paella a la Valencia
Spain's most famous main dish is paella (photo): a delicious combination of yellow saffron rice and seafood. The region around Valencia is the place where paella was born. Nowadays every region has its own style. Just the pan, the rice and the saffron are used in all. Ours is the Valencia one with chicken, fish, shrimps, clams, other seafood and green peas.
Moorish Chocolate
The dessert is a piece of chocolate cake in Moorish style with honey, raisins and almonds.
