EATING EGYPTIAN


Already 7000 years ago nomadic tribes of hunters, fishers, gatherers roamed the Nile Valley freely and their main food (for the rich and the poor) became grains and bread. Later, in the Pharao times, vegetables as leeks, onions, cabbage, beans, chickpeas and lentils became common. And also fruit such as grapes, raisins, figs, pomegranates and dates. Everyone liked fish and wild birds such as duck and geese, but meats such as beef, pork, deer and lamb were only for the upper classes.
Outside influences on the traditional Egyptian cuisine came by way of colonization: the Romans, invading Arab tribes and the Turkish Ottomans. And then there were still immigrants from Syria, Lebanon, and Palestine. All these influences are responsible for the current day Egyptian cuisine, which is
flavourful, with many herbs and spices but not spicy hot. Popular meats include pigeon, chicken, mutton, camel and buffalo. We hope you don't blame us for not serving the camel tonight...
White Bean Hummus
with Pitta Bread
Hummus is a thick sauce, very popular in many Middle Eastern countries. It comes in all kinds of tastes and mixes and can be used as a side dish for the main course, but often it is a starter: a dip sauce served with traditional bread. Our Egyptian version has white beans as a major ingredient, mixed with nuts and lemon.
Hamam Mahshi
(Stuffed Pigeon)
with Ruzz bi-l-khudar rice
and Egyptian Salad
The main dish tonight is stuffed, but don't worry: it will not be a mummy! We prefer a fresh Egyptians' favorite: a pigeon (see photo), filled with a mix of pigeon meat, onions, corn flour and mint and then baked in the oven.
We serve this juicy pigeon with Ruzz bi-l-khudar (Egyptian vegetable rice) and a fresh Egyptian salad with lemon and olives.
Khoshaf ‘ar’ ‘Asali
(Pumpkin Pudding)
The taste of this cold pudding is at least as intriguing as its original Arab name. It contains - of course - pumpkin, but in a tasteful blend with raisins, almonds and coconut.
