SURPRISING SOUTH-AFRICA


Our menu tonight gives a clear example how surprising South-Africa's kitchen is. Because our main dish Bobotie origins from 17th century Indonesia! The link? The Dutch colonialists, on their way home, stopped in the Cape of Good Hope settlement, ate their Indonesian 'Bobotok' there and left the recipe behind.
Nowadays Bobotie has been declared a South-African national dish, and it comes in many variations.
Smoked Calamari Salad
Lots of water around South-Africa, lots of seafood on the local markets, lots of seducing recipes. We start with pieces of smoked squid or calamari, drenched in a marinade which includes remarkable ingredients like mustard and small cubes of gherkins.
Bobotie
As said, Bobotie (see photo and intro) comes in variations. Many South-African homes have their own Bobotie. It is a casserole dish with minced beef and curry, chutney, sultanas and almonds. But who knows chef Phillip adds bananas or ginger or both - because creating Bobotie is using culinary creativity.
Traditionally Bobotie is eaten with yellow rice.
Koeksisters
A typical South-African name for this sweet dessert: the Dutch-Afrikaans word for cookie, combined with the English sisters. Enjoy this warm pastry in syrup.
