FIJI FUSION


The Fiji Islands, located in the South Pacific, are an ethnic and therefore also culinary melting pot. A multicultural society of mainly Melanesian, Polynesian, Indian and Chinese with relatively strong European influences, Fijian cuisine is a very good example of fusion cooking: tastes and influences blended and merged well into a delicious new menu. Coconut, cassava, banana and pineapple are amongst the many typical ingredients and the Indo-Fijian curries have a 'must try' label.
Kokoda
(Marinated Fish in Coconut Sauce)
In many countries in and around the Pacific 'cooking' fish by just using a marinade is a well-known technique. In Fiji the result is called Kokoda (photo). This salad is made of white fish marinated for a long time in lime juice. The marinade gives the fish its delicate structure (almost melting on the tongue) and its fresh taste. The combination with coconut cream makes it a truly tropical salad.
Fijian Curried Lamb
with Pineapple and Sweet Potato Bake
As said Indo-Fijian curries are considered a must. We selected a nice lamb curry for you - as always from imported lamb - prepared with a complicated spice blend in a yoghurt sauce. It comes with a tropical combination of baked pineapple and sweet potato in a coconut-cheese sauce.
Cassava & Banana Cake
We complete tonight's culinary Pacific cruise with a delicious tropical cake in which cassava and banana are the main ingredients.
