VISITING VIETNAM


The French traces in Vietnam are unmistakeable and can be found anywhere. No wonder, after a colonial period of more than 100 years. This influence is most visible in various inner cities and it is tastable in the Vietnamese cuisine. The French introduced. amongst other things, the technique of sautéing, the use of bones to make stock, the use of white potatoes. And on many street corners fresh French baguette are available every morning!
Today, Vietnamese cuisine is a unique blend of tastes and texture, not to be found elsewhere in Asia.
In one way our dinner tonight will not be Vietnamese at all: we don't serve all our dishes at the same time (as is common in Vietnam and many surrounding countries). We present a separate starter, main dish and dessert.
Vietnamese Hot and Sour Soup
The starter is an interesting vegetable soup with mushrooms and tomatoes and asian ingredients like tofu (soybean cake). The specific hot and sour taste comes from chili peppers and lime - we can make it as spicy as you wish. The surprising ingredient in this soup is pineapple which gives it a pleasant sweet aftertaste.
Beef or Shrimp Chao Tom
Chao Tom (see photo) is a typical Vietnamese barbecued dish. We cover the centre of sugar cane sticks with a paste made of (to your choice) beef or shrimp. Then, with a mix of Vietnamese spices, we barbecue them. They will be served on a small table barbecue. After eating the paste from the sugar cane stick, chew the sugar cane for its sweetness, but don't eat the cane.
This authentic dish is served with assorted vegetables, Vietnamese sauce and Buddha rice, which includes shredded coconut and ginger.
Banh Dua Ca Ra Men
If you read the name of this Vietnamese dessert carefully you might already have a clue of its origin: CA RA MEN - from the French 'caramel'.
The dessert refers to the colonial period and is a Vietnamese version of the typical French 'flan au caramel'. In this case the caramel is used in a pudding in which coconut plays the major role.
