Unfortunately during decades already Afghanistan is more known by Taliban, violence and papaver production than by its food. Nevertheless, the country's cuisine is a lot more interesting than one might think, based upon the usual tv images. Afghan food is largely based upon cereals like wheat, maize, barley and rice which are the nation's chief crops. Meat dishes with lamb, mutton or goat are common and so is the use of yoghurt.
Bonjan Kabul (Eggplant and Cheese Salad)
Bonjan is a popular starter in Afghanistan: a salad in which slices of fried eggplant/aubergine are the main ingredient. In the Kabul version of this dish cubes of fried farm cheese are added.
Afghani Lamb Stew with Spinach and Potato Wedges
The main dish is a wellknown mild spicy Afghan lamb stew, combined with fresh spinach and yoghurt. The dish is served with fried potato wedges.
Shir-Berinj
Shir Berinj is the Afghan version of a sweet rice pudding that can be found in neighbouring Pakistan and Northern India as well. It contains rose water, sultanas and pistacchio nuts.
